Family-run business founded in 1880 by Gaston Tessendier, the distillery today boasts a Domaine of over 25 hectares in the heart of the most exclusive of the Cognac region's crus: les Borderies.
4th generation of Maitres de Chain, Lilian & Jérôme Tessendier compose, blend the eaux-de-vie which, thanks to the particular and rigorous attention paid daily by the entire team, will become Cognacs Park with a pure, delicate and complex style.
After 12 months' ageing in new oak barrels, this Cognac is transferred to fûts roux (the name given to barrels that have previously contained eaux-de-vie). Like a living encyclopedia of Cognac, the Maître de Chai has drawn from a stock of 15,000 oak barrels to patiently compose the unique blend that gives birth to XO. In search of the perfect balance, this 100% Grande Champagne eau-de-vie reveals itself as an emblem of its terroir of origin.
This XO boasts a resplendent copper color with golden highlights. Pretty candied fruits, notes of apricot Sec, dried fig and walnut, greet the nose. Subtle baking spices appear, with notes of gingerbread and a lovely rancio. Precious touches of wood and spice, vanilla, clove and nutmeg follow. A rich, opulent nose that transports us to faraway lands.
The entry into the mouth is quite spicy and woody. Soon after, fruit aromas Secs appear: apricots Secs, hazelnuts, walnuts and almonds. Fruity notes are joined by tobacco leaf and earthy tones, a powerful but very harmonious explosion of flavors. The finish lingers long on a touch of leather, oak and dark chocolate.
A XO with a strong personality that will enrich any autumn or winter evening enjoyed neat, and make a bold pairing with Roquefort cheese or vanilla ice cream.
