It is a blend champagne composed of around 55% Chardonnay des Grands Crus (Avize, Chouilly, Cramant, Le Mesnil-sur-Oger) and 45% Pinot Noir des Grands Crus (Ambonnay, Bouzy, Louvois, Mailly, Tours-sur-Marne and Verzenay).
Made from these Grands Crus, only the best grapes by sorting from the best plots are selected and come from the best vintage years.
The Grand Siècle cuvée benefits from a long aging in the cellar away from light and at a constant temperature for 7 to years sometimes longer.
The color is bright straw yellow.
On the nose: a complex explosion of lightly candied citrus fruits followed by aromas of pastries, toasted almonds with fine touches of acacia honey and gingerbread with a subtle and light finish of white flower notes.
On the palate: freshness, intensity and minerality, the three great qualities of an exceptional champagne. The finish is delicious with a wide range of black or white truffles, candied pear and toasted almonds.
Ideal serving temperature: 10 to 12 ° C.
Food / wine pairing: dazzling with a combination of "land and sea" such as poultry with crayfish or scallops with black Périgord or white Alba truffles.
