A Champagne composed only of the best Vintages.

It is a champagne made exclusively from the heads of vintages and therefore from the first ones pressed at the Vendangeoir. This Champagne without malolactic fermentation is the result of the marriage of the best vintages. Vinified entirely under wood to obtain more complexity, the blend is 70% Pinot Noir and 30% Chardonnay.
Beautiful golden color with fine coppery reflections
On the nose: quince and orange jam followed by numerous citrus fragrances like Menton lemon.
In the mouth: ample, powerful with a wide olfactory and gustatory palette of red berries or delicate touches of oak with light vanilla notes.
To be served around 10 to 12°C.
Perfect with marinated fish such as salmon with dill, but also with fish en papillote flavored with fennel or a pike with champagne sauce. It is also perfect with sushi, orange-glazed duck or white meats.
Can remain in cellars for many years, protected from light and noise, bottle lying down.

It has been almost three centuries that the Rodez family are linked to the champagne land and most notably the Ambonnay terroir, with its small village and streets surrounded by the vineyards’ boundary walls.
Nowadays, it is Mickael, a ninth generation, who took over.
Just like before, this House continues to vinify the main part of its Champagnes in small oak barrels. The majority of the wines don’t go through a second malolactic fermentation, thus allowing the wine to age longer in cellar, while enhancing its qualities.
