This Champagne exclusively originates from the “têtes de cuvées” which are the first presses from the fermenting room. This Champagne, without malolactic fermentation is the product of a blend of the best vintages. Entirely vinified in wooden casks to reach a greater complexity, the blend is 70% Pinot Noir and 30% Chardonnay.
Beautiful golden colour with fine copper reflects.
To the nose : quince and orange jam followed by many citrus fragrances like Menton lemon.
To the palate : wide, powerful with a wide range both olfactory and gustatory, on red berries or delicate touches of oak with light vanilla notes.
To be served around 10 to 12°C.
Fits perfectly with marinated fishes like dill salmon, but also with fennel-flavoured baked fishes, or a pike with champagne sauce. Also fits with sushi or even orange roasted duck, or white meats.
Can stay in cellar for many years, away from light and noise, bottle laid flat.

It has been almost three centuries that the Rodez family are linked to the champagne land and most notably the Ambonnay terroir, with its small village and streets surrounded by the vineyards’ boundary walls.
Nowadays, it is Mickael, a ninth generation, who took over.
Just like before, this House continues to vinify the main part of its Champagnes in small oak barrels. The majority of the wines don’t go through a second malolactic fermentation, thus allowing the wine to age longer in cellar, while enhancing its qualities.
