1995 will be the first vintage from Clos Saint-Hilaire, named after the patron saint of the church in Mareuil sur Aÿ where is located this unique 1 hectare vineyard, solely planted in Pinot Noir variety.

Pressing is done in the vineyard, to avoid transportation and keep the freshness qualities of the grapes right after they’re taken out of the vine. Vinification takes place in oak barrels. Now every bottle is numbered and every vintage only carries 3.500 to 7.000 bottles.

The 1999 vintage was elaborated following the same criteria.

The fragrances in this 1999 vintage are exceptionally fruity and floral.

The taste is silky and pleasantly vinous, on a lingering finish with salty and leathery notes.

Ageing in cellar for 10 to 20 years will reveal, year after year, its qualities.

It is a champagne for every aperitif or meal, with canapés of your choice (caviar, smoked salmon or Auvergne trout), or grilled or baked fishes like bass or turbot filets, or pike with a white butter sauce. Will also fit very well with white meats.
