In 1584, Pierre Gosset who was then Echevin of Aÿ and a winemaker, produced still wines, often red, with the harvest of his own vines at Aÿ. It is as such that this House is the oldest House of Champagne.
At that time, the wines of Aÿ as well as the wines of Bourgogne competed for the place at the table of the Kings of France. Both were made from Pinot Noir and Chardonnay.
Later, in the 18th century only the wine of Aÿ, called at the end of the 19th century Champagne, became effervescent.
This is a Champagne Brut of blends from the villages of Aÿ, Bouzy, Ambonnay, Le Mesnil-sur-Oger all classified Grand Cru and Villers-Marmery classified Premier Cru. It is composed of 45% Chardonnay, 45% Pinot Noir and 10% Pinot Meunier.
The wine has been cellared for a minimum aging period of 3 years.
La robe is a luminous Versailles gold.
On the nose and palate: white flowers such as hawthorn and acacia with fresh, delicate notes of yellow fruit such as vine peach or mirabelle plum. Slightly acidic citrus notes.
Dining and wine pairing: serve at around 10°C, but no lower, to preserve the elegance of this exceptional Champagne. Ideal with a variety of tapas, poultry or even shellfish, langoustines and Marennes oysters. Also perfect with cheeses such as Parmesan and Comté or soft cheeses.
