In 1584, Pierre Gosset who was then Echevin of Aÿ and a winemaker, produced still wines, often red, with the harvest of his own vines at Aÿ. It is as such that this House is the oldest House of Champagne.
At that time, the wines of Aÿ as well as the wines of Bourgogne competed for the place at the table of the Kings of France. Both were made from Pinot Noir and Chardonnay.
Later, in the 18th century only the wine of Aÿ, called at the end of the 19th century Champagne, became effervescent.
This is a Rosé Brut blend composed of 56% Chardonnay and 35% Pinot Noir, made from vineyards located in Premier and Grand Cru Classés. The high proportion of Chardonnays gives it freshness and uprightness, while the presence of red wine from Bouzy and Ambonnay, for the remaining 9%, brings the fruitiness of the Pinot Noir grape.
A beautiful salmon pink petal color, brilliant and limpid.
On the nose as on the palate: this Rosé reveals subtle aromas of wild strawberry. The palate is round and elegant, with a fresh finish.
Dining and wine pairing: this Champagne is a wonderful accompaniment to desserts with red fruits such as strawberries, raspberries and blueberries. Also ideal as an aperitif with fish tapas, Scottish salmon, or with foie gras, which will exude all its flavors.
