This House founded in 1818 since by Nicolas François Billecart and Elizabeth Salmon remains, even today, one of the last Houses of Champagne still family-owned and independent, directed by François Roland-Billecart, at the head of the 6th generation.
Founded in 1818 by Nicolas-François Billecart and Elizabeth Salmon.
An independent House for nearly 200 years led today by the sixth generation whose unchanging oath is: Prioritize quality, strive for excellence.
This is a Champagne Brut Rosé made from the 3 dominant grape varieties of the Champagne Region: chardonnay grape variety for 40% of the superb Marne crus, 30% Pinot Noir grape variety from the characteristic crus of the Montagne de Reims and Grande Vallée de la Marne vinified in red, 30% Pinot Meunier grape variety from the crus of the Vallée de la Marne and Coteaux sud d'Epernay.
After harvest, the wine is perfected in bottle on lees for at least 24 months in the deep cellars.
La robe is pale partridge-eye pink with some shimmering gold highlights.
On the nose: fine bouquet of white floral notes and red berries such as wild strawberry, pigeonheart cherry or spring gariguette strawberry with citrus zest. On the palate, the berries are even more present, with hints of southern Italian lychee and bergamot.
A successful aperitif with sushi, smoked salmon maki, on prawn fritters from the Seudre basin, as a starter with Marennes-Oléron or Belon oysters, grilled pibales flambéed with Cognac Japanese or Asian style. Splendid on a red spring fruit tart or summer fruits such as quetsche or Reine-Claude or Cretan apricot.
