On the nose as well as on the palate, the wine is rich in white flower and citrus fruit aromas such as Menton lemon, very slightly stewed.

In second reading the wine is very brioche and fine toast

Food and wine pairing: with seafood at the beginning of the meal, such as Marennes oysters, whose expression blends intimately with the minerality, lobsters or prawns a la plancha, or seafood in a beurre blanc sauce, such as Saint Pierre or turbot.

Champagne Diebolt-Vallois is the alliance by marriage of two families, one of which, the Diebolts, has been established in Cramant since the 19th century and the other, the Vallois, has been established in Cuis since the 15th century.

However, it was not until 1978 that the house took off with the extension of the estate and the construction of an additional cellar.

The Diebolt-Vallois house is established in Cramant on the famous Côte des Blancs, an exceptional location for the quality of its extremely chalky soil and ideal for the Chardonnay grape variety. The Diebolt-Vallois vineyard covers 11 hectares for a large majority in Cramant and the other in Cuis, classified respectively Grand Cru and Premier Cru with small plots in Chouilly and Le Mesnil sur Oger.

The entire vineyard is planted exclusively with Chardonnay. The very carefully studied East-South-East exposure is particularly suited to Chardonnay, a grape variety which, over time, will give a wine with fruit, powerful and fat. The vineyard is managed in reasoned culture.
