A Champagne coming only from the terroir of Ambonnay.

It is a Champagne Grand Cru d'Ambonnay exclusively, resulting from the marriage of 60% Pinot Noir and 40% Chardonnay bringing thus by the Pinot Noir structure and body and by the Chardonnay finesse and elegance.
Moreover, the Cuvée des Crayères is elaborated with an average of a dozen wines from 4 to 5 different vintages and from 20 to 25% of wines vinified in small oak barrels.
The robe is light gold with small golden reflections.
Very mineral and very floral in the nose.
The palate is generous and fresh with notes of red berries such as wild strawberry and the finish is superbly long with a light vanilla woodiness.
To be served around 10 to 12°C.
Perfect as an aperitif with foie gras or smoked trout canapés from Auvergne.

It has been almost three centuries that the Rodez family are linked to the champagne land and most notably the Ambonnay terroir, with its small village and streets surrounded by the vineyards’ boundary walls.
Nowadays, it is Mickael, a ninth generation, who took over.
Just like before, this House continues to vinify the main part of its Champagnes in small oak barrels. The majority of the wines don’t go through a second malolactic fermentation, thus allowing the wine to age longer in cellar, while enhancing its qualities.
