Taittinger

It was in 1734 that Jacques Fourneaux created a Maison de Commerce de vin de Champagne as he was working with the great Benedictine abbeys who then owned the finest Champagne vineyards.

Jacques Fourneaux started this business in Reims, selling still Champagne red and white wines, followed by sparkling wines from these magnificent vineyards.

He is the third in the history of Champagne to start trading. The Fourneaux joined forces with Antoine Forest in the 1820s. The new business soon prospered under the name Forest-Fourneaux.

For a time, the company occupied the Hôtel le Vergeur in "Reims", before transferring, after the First World War, its business to rue de Tambour in the 13th-century home of the Comtes de Champagne.

In 1932, Pierre Taittinger acquired Château de la Marquetterie near Epernay from the Maison de Champagne Forest-Fourneaux. From 1945 to 1960, the company was managed by François Taittinger, assisted by his two brothers Jean and Claude, and it was during this period that the company moved into the cellars of the Saint-Nicaise abbey, built in the 13th century on Gallo-Roman chalk pits dating back to the 4th century. Then, in 1960, Claude Taittinger took over the helm and gave the company a considerable boost.

Description Taittinger Comtes de Champagne 2012.

The cuvée"Comtes de Champagne" represents the quintessence of the know-how of the Taittinger house, this most prestigious champagne of the Taittinger range, is only elaborated when all the optimal conditions are met.

It is made exclusively from Chardonnay grapes from the 5 villages of the Côte des Blancs in the villages of Avize, Chouilly, Cramant, Le Mesnil-sur-Oger and Oger.

The wines of the 2012 vintage exclusively are bottled to be brought down into deep cellars (called Crayères) located under the Saint-Nicaise church built in the 13th century on the heights of Reims at a depth of 18 meters for a prolonged aging of 8 to 10 years.

The color is bright straw yellow.

The nose reveals greedy notes of gingerbread, licorice and meringue, sublimated by aromas of white flesh fruits such as vine peach or mandarin peel.

The mouth is smooth but lively with a supple and fleshy sensation, with some touches of citrus fruits such as Florida grapefruit and candied fruits such as Ente plum or Alsace mirabelle plum

The finish is fine and long with a spicy touch of licorice and vanilla.

In perfect harmony with seafood, shellfish or sea fish grilled on the barbecue or in sauce.

Bottles to be kept in a cellar away from light and noise with a hygrometric degree of about 70%.

We suggest, in order to let it perfect itself over time, successive tastings to measure its olfactory and gustatory evolution until its peak of quality.
