It all starts with Florens-Louis Heidsieck. Born in 1749, this son of a Protestant pastor from Westphalia settled as a draper in Rheims where he fell in love with a Champagne girl... and the wine of Champagne.

A self-taught man, he was driven by a great ambition, "to create a vintage worthy of a queen". In 1785, he founded the Champagne Heidsieck & Cie cloth and wine trading house.

He became a master of his art to the point of having the honor of presenting his wine himself to Queen Marie Antoinette.

The prestigious Piper-Heidsieck champagne house unveils a second opus of the HORS-SERIES collection: a vintage blended 40 years ago, spent 39 years on the lees before being disgorged in 2022 to give it its greatest freshness.

In order to guarantee an absolutely remarkable quality, the cellar master of the house and the oenological committee have tasted each bottle.

This is a true heritage passed on by several generations of cellar masters. This cuvée is a very limited edition and is distinguished by its singularity, related to its aging time in the cellar or to its particular assembly.

It is an extra brut champagne blend composed of 60% Pinot Noir and 40% Chardonnay.

Presented in a solid oak box, expressed by the graphics of urban art in 1982 from New York to Paris between graffiti, stickers and posters.

The robe is straw gold with reflections marked by a patina of yellow and green.

A perfect floral and fruity balance appears at first nose, the intensity of the notes of mirabelle plum answers the aromas of fresh quince. Delicate hints of small black fruits such as blueberry follow, enhanced by notes of coffee beans.

On the palate, a wide and powerful aromatic palette with spicy notes as well as a remarkable freshness for a forty years old historical champagne.

Its length coats the palate with a velvet touch, combining vinosity and smoothness. The finish is lively, with citrus accents.

Food and wine pairing : it is ideal with shellfish, such as blue lobster from Brittany, fish such as turbot or monkfish caviar flavored with coriander.

It will also go very well with a pan-fried fillet of sole, a sauce with two lemons and Tonka beans.

Or on fresh goat cheese matured with rosemary and a fine touch of honey.

Bottles to be kept in a cellar protected from light and noise with a hygrometric degree of 70%.
