This House, founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, is still one of the last family-run and independent Champagne Houses, run by François Roland-Billecart, head of the 6th generation.

2009 is a rather calm year in climatic terms in Champagne.

The winter, very cold, is followed by an ideal spring, with mild temperatures and days, sunny in April-May, then rainy in June and early July.

The rest of the summer, and until the harvest, a warm and Sec weather allows a harvest at optimal maturity and an impeccable sanitary condition.

A very fine vintage!

This cuvée was created in 1998 as a tribute to Elisabeth Salmon, co-founder of the Maison.

It is 55% Pinot Noir from the villages of Aÿ and Mareuil sur Aÿ in Premier and Grand Cru, and 45% Chardonnay Grand Cru from Côte des blancs.

The part of the Pinot Noir vinified as red comes from the famous south-facing plot of old sloping vines, Valofroy.

The wines, vinified in stainless steel tanks, are then aged on fine lees for 11 years. After disgorgement, they receive a dosage of 7g/L.

The wine is luminous, with a salmon-pink hue and copper highlights.

The approach is refreshing, sensual, on redcurrant jelly and mandarin.

Then more intense notes emerge, of blackcurrant and blueberry, or sweet spices, violets and sakura leaf.

The palate is delicate and savory at the same time, on panettone, peach, candied clementines and ginger, all enhanced on the finish by a chalky hint.

This great wine with its unique character and great purity will sublimate a poached tomato-rhubarb lobster.
