Paul Bara

Implanted in 1833 in Bouzy, a terroir classified Grand Cru 100%, Maison Bara has been handed down from generation to generation for over 180 years.

Over the decades, the Champagne Bara has managed to pRéserver its artisanal character, while evolving technically to perfect its autonomy and constantly improve the quality of its production: installation of an automated press, a temperature-controlled vat room and extension of the cellar. Above all, Maison Bara works with a deep respect for the land and its environment.

The vineyard of Paul Bara is located in Bouzy, a terroir classified 100% Grand Cru of great renown. A reputation earned thanks to the rich, highly expressive characters of its Pinot Noirs.

The Paul Bara vineyard enjoys a full southern exposure, providing perfect conditions for grape ripening. It is among the 30 best-situated sites at Bouzy. The chalk, predominant on the Bouzy terroir, helps drain the soils of excess water and gives the grapes the necessary minerals.

In 2021, Stéphanie Ducloux is appointed Director, when Chantal takes on the role of President.

Both of them, through sustainable viticulture, watch over the 11 hectares of Domaine, divided into 33 parcels including 9.5 ha of Pinot Noir and 1.5 ha of Chardonnay.

Description Paul Bara Special Club 2015.

It is a champagne of assembly elaborated from 30 % of Chardonnay grape variety and 70 % of Pinot Noir grape variety, coming exclusively from Bouzy classified Grand Cru.

It is a champagne elaborated exclusively during the great exceptional years and it is thus a mono-cru and mono-vintage, vintage.

The robe is pale golden yellow with bright golden reflections.

On the nose: notes of chalk, hazelnut, acacia honey, pruned almond, white vine peach and lychee. In the second attack: notes of citrus fruits such as pineapple or Menton lemon, mirabelle plum from Alsace with a hint of candied lemon peel.

The palate reveals hints of Menton lemons and Florida grapefruit with a fine touch of southern Italian bergamot. The finish is superb, mineral with a fine touch of salinity.

Food and wine pairing : to be enjoyed around 10°C with goose or duck foie gras canapés from the Gers, with sushi or smoked salmon makis, with Spanish Pata Negra and Charentais melon rolls. Extra with fish in sauce, or even grilled a la plancha.

To be kept in the cellar at around 16 to 18°C, away from light and vibrations, with the bottle lying down. Don't forget to do some tastings during this ageing to measure the qualitative evolution of this exceptional champagne.
