Description Gonet Roy Soleil Blanc de Blancs.

It is one of the rare champagnes that could be compared to a concerto written with brio for a single instrument because it is made from a single vineyard and a single grape variety: Le Mesnil sur Oger, classified as a Grand Cru at the very top of the qualitative hierarchy of champagnes.

It is a blanc de blancs brut champagne, exclusively from the Chardonnay grape variety, composed of wines from the 2015 harvest for 70% and 30% of wines from the 2016 harvest.

After the exclusively manual harvest, and sorting of the berries in the vineyard and in the cellars, the wines during their fermentation are fermented in French oak barrels of 650 liters (demi-muids) until their bottling.

The precious bottles will then be lowered into a deep cellar, lying on slats, protected from light and noise for a minimum of three years. The production is rare and only a few thousand bottles are produced.

The color is golden with some fine green reflections.

After a few minutes, the time for the wine to express itself in the glass, the first attack on the nose reveals candied fruit aromas such as apricot, clementine peel from the island of Beauty, with some touches of white flowers such as spring hawthorn. The second attack presents notes of brioche and toasted buns with a subtle woody vanilla finish.

The palate develops remarkable aromas of ripe citrus fruits such as Menton lemon, Florida pink grapefruit and Corsican clementine.

This exceptional wine should be served at around 10 to 11 °C but not lower, so as not to break the wonderful perfumes and taste sensations. It will go very well with foie gras canapés from the Gers, sole meunière with lemon butter sauce, monkfish caviar, or calamari cooked on a plancha and seasoned with Espelette peppers.

Bottles to be kept in a cellar away from light and noise with a hygrometric degree of about 70%.

We suggest, in order to let it perfect itself over time, successive tastings to measure its olfactory and gustatory evolution until its peak of quality.
