The Maison Cazals was founded in 1897 in Mesnil-sur-Oger by Ernest Cazals, a renowned cooper originally from the Hérault region of France who had married a Champagne woman.

DelpHine Cazals has been running the business since his father passed away in 1996. The entire Cazals vineyard comprises 9 hectares of vines spread over 4 communes: Le Mesnil-sur-Oger, Oger, Vertus and Villeneuve. One part is therefore classified as Grand Cru and the other as Premier Cru. All vines are planted with Chardonnay to create cuvées with their own identity, full of finesse and aromatic power. The oceanic climate with continental influences is conducive to its healthy development.

One of Maison Cazals' assets is to own an exceptional parcel classified as Grand Cru in a delimited area: Le Clos Cazals, covering 3.70 hectares of old vines in the village of Oger.

This is one of the very first clos de Champagne (21 clos are now officially recognized in Champagne); these are sought-after wines because the clos, thanks to the reverberation of the walls that reflect the sun's heat, offers exceptional ripening to the grapes. Here we combine the finesse of the Chardonnay from Oger (Grand Cru) with the richness of the grapes from a clos.

The strong minerality of the Oger terroir and the unique production of a clos have enabled us to produce a harvest of very high quality.

This 100% Chardonnay cuvée is essentially vinified in vats in barrels and part in stainless steel tanks to pRéserver its freshness and liveliness. Then after bottling, the wine spends 10 years in the cellars before disgorging, and then receives a dosage of 2g/L.

The wine is fine and elegant but also has all the ardor of Oger wines. The nose opens with white flowers, hawthorn, lime blossom, followed by more eXOtic notes of passion fruit. The palate is creamy, rich and pastry-like, with hints of candied lemon. The minerality of the Oger terroir comes through clearly on the long, invigorating, iodized finish, typical of the great Blanc de blancs. Delicious with truffled foie gras! But a pike-perch from the Erdre with beurre blanc will also be the ideal companion to this Clos Cazals 2013.
