Diebolt-Vallois

Ranked among the top 30 Champagnes de vigneron, Champagne from Diebolt-Vallois embodies the excellence of the region's terroir.

Located in Côte des blancs, Domaine comprises 14 hectares of vines planted mainly with Chardonnay and located in Grand Cru Cramant and Premier Cru Cuis. The vineyard is managed using integrated pest management with a minimum of treatments and progressive grassing of the plots.

The wines of Réserve are made in vats or foudres and then stored in a cellar 14 meters underground for slow, regular aging, to bring out the typical roundness of Champagnes Diebolt-Vallois.

The Domaine Diebolt-Vallois is selected by Michelin-starred restaurants in Paris, such as Eric Fléchon's Epicure, Alain Passard's Arpège and Le Cinq, as well as the Flocon de Sel in Megève.

Description Diebolt-Vallois Fleur de Passion 2013.

This cuvée Millésimée Blanc de blancs, made exclusively from the chardonnay grape variety, is the flagship of Maison Diebolt-Valois.

It is the fruit of a selection of 7/8 parcels of 60-year-old vines in the Les Buzons lieu-dit at Cramant (100% Grand Cru).

The east/southeast exposure, combined with outcropping chalk soils, offers low yields and grapes, endowed with great aromatic power, that contain minerality and salinity.

In the cellar, fermentation is carried out "the old-fashioned way", with alcoholic fermentation in barrels, malolactic blocking, no filtering or fining, and aging in one-wine Burgundy barrels.

Finally, a low dosage of 3 to 5 gr/liter depending on the vintage is carried out at final bottling.

With its limpid, sparkling color, this cuvée opens with very fine notes of yellow peach and redcurrant blossom, followed by smoky notes of flint, walnut and mushroom.

The effervescence is of great delicacy and the fruit on the palate is firm, fresh and juicy at the same time.

It's enhanced by its buttery (typical of Cramant) and pastry side, with smoky spices and that mineral, saline feel that partly gives it its freshness.

This Fleur de Passion 2013 is a complex cuvée, at once airy and powerful, generous and fresh, with exceptional depth and length.

It will successfully accompany a sea bass with sauce vierge, and for gourmands a Paris-Brest quite simply.
