An ancient agrarian measure used in the past in Champagne, the Hommée represented the surface area that a man could work in a day in the vineyard, i.e. approximately 3.33a (333m2). This cuvée is elaborated from the historical and most emblematic terroirs of the vineyard.
Chardonnay (60%) and Pinot Noir (35%) constitute the blend of this wine. Exclusively from Premier Cru villages located on the Montagne de Reims between 150 and 230 m of altitude, on moderate slopes (between 5 and 15 °) facing East. The vines are 40 to 50 years old.
The wines are aged in small Champagne barrels or 1/2 muids for 10 months on the lees. Small proportion of reserve wines, aged in barrels.
A minimum of 5 years of ageing is necessary for the elaboration of this cuvée before being rested ideally 6 months before its marketing.
The attack is characterized by fine bubbles and a creamy foam. Fruity and vegetal notes of orchard fruits, dried apricots, lime blossom and spices seduce the nose. The taste buds are delighted by the intensity and the aromatic persistence. The elegance, the greediness, and the minerality of this vintage accompany an aperitif as well as a refined dinner (Langoustine of Brittany, scallops of diving, ravioles with black truffle of Périgord).
