Edmond de Ayala in 1855, son of a Colombian diplomat, moved to Mareuil en Champagne to learn how to vinify wines. He married in 1858 with an Albrecht who brought in the wedding basket the castle of A dans and its vineyard and together founded the Maison Ayala in 1860 and the mark was filed with the registry of the commercial court of Reims in 1875.
Edmond's brother who had moved to London in the meantime and who is a very close friend of the Prince of Wales asks his brother to make a low-dose champagne and Ayala will thus become the official supplier to the English crown. . The image of Ayala champagne is created and so is its success.
The vicissitudes of the phylloxera crisis in the years 1885 which will almost destroy the vineyard, the fire in the cellars and the castle in 1910, the war of 1914-1918, the crisis of 1929 weaken the Ayala house which will pass from hand to hand until 2005 by being bought by the Bollinger house, whose cellars are almost adjoining and face in the same street.
