Vilmart & Cie

Champagne Vilmart & Cie is a family-run Champagne house that embodies the very essence of Champagne craftsmanship and tradition.

Founded in 1890 by Désiré Vilmart, this house is located in the village of Rilly-la-Montagne, in the heart of France's Champagne region. For over a century, the Vilmart family has been committed to producing Champagnes of exceptional quality, with an emphasis on respect for the terroir and artisanal winemaking methods.

The house has remained in the family since its foundation, and the fifth generation today carries on this legacy with unwavering passion. This family continuity is essential to pRéserver the consistency and quality of Champagnes.

The vineyard covers 11 hectares, mainly located in Montagne de Reims, a region famous for its chalky soils and optimal sun exposure. These ideal vine-growing conditions enable the house to cultivate the classic grape varieties of Champagne, including Pinot Noir and Chardonnay.

The grapes come mainly from estate vineyards and are carefully selected for their exceptional quality. Each vineyard parcel is vinified separately to highlight the unique characteristics of each terroir.

The house's Champagnes are the fruit of a skilful combination of different harvest years, with a predominance of vintages, meaning that each bottle is the expression of an exceptional year. This approach highlights the richness and complexity of the Champagne terroir.

Description Vilmart & Cie Grand Cellier d'Or 2016.

Blending composed of 80% Chardonnay and 20% Pinot Noir classified Premier Cru and from vines of 50 years old age in Rilly-la-Montagne. 

Intense, golden, lemon and yellow in colour with very fine persistent bubbles. These small pearls give birth on the surface to a beautiful white cord.

Melted butter, custard, candled pineapple, cardamom and with pepper are the notes that reach us directly. Then after a few moment, another round of flavors arrives, nuts aromas at first (pralines, hazelnut) followed by mineral notes (chalk, roasted shellfish). The wine is mature, complex with a lot of personality. It still evolves in the glass with cinnamon and gingerbread aromas. The imperceptible dosage and the frank acidity give us a sharp acid / sugar balance extra brut type. The vinosity is expressed through bold and wood.

The finish is very long around ten to twelve seconds and clean, with a nice conclusion on grapefruit and pralines notes.

Too complex food pairing should be avoided to keep the wine balance. It texture and mature aromatic profile, will lead the wine to seek products preferably like caviar or with dishes with firm texture (lobster, white meats) and reduced sauces.
