Description Penet Chardonnet Verzy "Les Epinettes" 2010.

The Maison Penet-Chardonnet operates a 6-hectare vineyard, 5 on Verzy and 1 on Verzenay, two villages classified Grand Cru.

Les Epinettes is a lieu-dit located in the heart of the Verzy terroir on northwest-facing chalky soil, where the Penet family owns a plot planted with vines around forty years old and 100% Pinot Noir.

Vinification takes place in small vats, without malolactic and with aging on the lees. The wines spend 10 years on laths before being disgorged and receive a dosage of 3g/L, this is a Extra brut.

This Blanc de noirs, released at less than 3,000 cols, is a pure, chiseled and racy expression of Pinot Noir.

It presents itself in a rich gold hue. The nose is complex, dominated by the freshness of peach, apple and nectarine. There are also hints of strawberries, raspberries and cherries, hallmarks of Pinot Noir, before finishing on smoky notes of hay or musk. The palate is full and rich, with an elegant mousse and a yeasty taste. Red fruit, blood orange, candied lemon and mint chocolate are immediately present. The finish is long, gourmand, with its subtle fruity notes, and mineral, we find that smoky sensation.

For a divine pairing, dare the simple boiled egg accompanied by "mouillettes" of toasted bread with truffle butter!
