An invitation from Olivier Bonville and Ferdinand Ruelle. Odyssée 319, a journey through the 319 villages that make up the Champagne appellation area.

With its 34,300 hectares spread over 319 crus, Champagne offers infinite possibilities.

It's on this multitude of identity terroirs that their observation focuses their observation.

Their passion for the wines of Champagne and their desire for new experiences, lead them out of the chalky subsoils of the Côte des blancs for new discoveries.

Description Odyssée 319 - Jour 2 : Chardonnay à Avize, Le couchant.

It is a Champagne made from a blend of wines harvested from a few pieces of vines all located in Avize, classified Grand Cru and facing the Sunset and so named as a nod to their exposure.

This cuvée is a Blanc de Blancs from these very finest plots and harvested exclusively in 2013, a vintage and a cru that seduces both by its roundness and its complexity. A great wine to keep for future years, it is a single-vintage champagne, 2013, and almost parcel.

The color is gold with green reflections.

On the nose and on the palate, rich aromas of fruit fruits with yellow flesh such as vine peach, apricot or pear. Notes of white flowers also mingle. The finish gently melts into salty and suave notes.

Food / wine pairing: as an aperitif served at 10-12 ° C accompanied by oysters from Marennes Oléron, Belon from the Emerald Coast in Brittany. Perfect on canapes of caviar or tapenade made from black olives from Provence. An unforgettable moment with sushi or salmon steaks in foil flavored with dill and Echiré butter.

Bottles to be stored in the cellar away from light and noise with a humidity of 70%.
