It is a brut Premier Cru Champagne, composed of Chardonnay grape varieties exclusively and produced from vines located in Premier and Grand Cru classified.

The wine remained on the lees for 7 months, in barrels for 25% of the total. The wine is then blended with reserve wines for 20%, including 3 consecutive vintages.

On the nose and on the palate: expressions both in flavor and fragrance of white flowers and citrus fruits such as strawberry, peach, pear, with touches of lemon from Menton, lychee, kumquat, and bergamot from Southern Italy. Nice roundness on the palate with a finely creamy hint, with a fine touch of woody vanilla.

Food and wine pairings: oysters from Marennes Oléron, Belon or Brittany from the Emerald Coast. Canapes of caviar or tapenade, grilled fish a la plancha such as Atlantic sea bass or salmon from Scotland or the North of Ireland.
Perfect with white meats such as veal with morels or Bresse chicken with Bordeaux porcini mushrooms.

Excellent on citrus pies such as Mirabelle de Lorraine or Gariguette strawberries from Dordogne and late Spring.

The bottles will be placed in the cellar away from light and noise with an optimal humidity of 70%. To be served around 8 to 10 ° C but not less in order to appreciate its fine flavors and delicate fragrances.

It is the fifth generation since 1856 to Vertus, famous Premier Cru Classé of the Champagnes region, who manages the Veuve Fourny vineyard. Most of this vineyard is located on the Côte des Blancs. It is made up of old vines over forty years old, an ideal age and an essential condition for achieving this level of champagne quality.

In addition, the orientations of the south, east and south-east plots promote ripening and an optimal sanitary condition of the vines at the time of formation of formances, flowering and harvest.

The vineyard covers approximately 23 ha, of which 19 are planted with Chardonnay grapes and 2 with Pinot Noir grapes. The vines are based on a soil composed of limestone and chalk (Upper Cretaceous), two essential factors for producing high quality champagnes. The vineyard is maintained in reasoned culture and all the harvest is manual.

The Maison Veuve Fourny has also owned the famous Faubourg de Notre Dame clos, since the 19th century.

Part of the harvest is aged in small French oak barrels for at least 6 months.

Maison Veuve Fourny produces around 200,000 bottles per year, all Premier Cru and Grand Cru.
