The Champagne has a yellow gold color with straw yellow reflections. Endowed with a deep luminosity, it is traversed by fine bubbles which feed with liveliness a delicate cord. The rather fluid disc reinforces the rich and nuanced visual sensation.
The nose is concentrated. It evokes biscuits, toasted bread, butter, blackcurrant. The stirring of the flute gives it aromas of peanuts, black pepper, nutmeg with a scent of peony. Further ventilation reveals notes of toast, toasted almond, hawthorn honey, applesauce, mango, amarena cherry, licorice, figs. The olfactory sensation is uninterrupted, both powerful and refined, with presence, that of a terroir imprint.
The approach on the palate is fresh and fruity, with a creamy effervescence. The wine spherically fills the palate with patina, power and dry matter. The fruity density gives a crunchy touch reminiscent of plum and mirabelle plum. This generosity is both well coated by the chalky minerality and refreshed by a fresh and melted acidity. The finish confirms the gluttony and the breed of these Pinots Noirs, both sappy and tasty, in a set where the fruity and spicy aromatic return recalls the origin of a Grand Cru.
This racy and refined Blanc de Noirs Grand Cru shows a strong fruity presence and a successful structure. It will amaze you at the table and adapt to your preparations.
