The Gastronome cuvée is a concept of "Creamy" champagne that is found in very few Champagne producers.

Always 100% Chardonnay, the Chouilly Grand Cru and the Cuis 1er cru are dominant in this cuvée to bring freshness. Cramant and Oger soils, both Grands Crus give substance to the Champagne :

- 51% Chouilly grand cru (exclusively from “Montaigu”) gives it fruitiness and salinity

- 18% Cramant grand cru (mostly "Bushes") to give roundness and elegance.

- 5% Oger grand cru (Terres de Noël, Brulis, Champs Nçons) provide a "more masculine" substance and a "spicy" minerality ...

- 25% Cuis 1er cru (“Roualles” and “Croix-Blanche”) essential to sign the liveliness and freshness of the Pierre Gimonnet style.

- 1% Vertus 1er cru as a supplement to provide exotic substance.

This blend has the characteristics of a great Chardonnay wine in its youth, and expresses "the Pierre Gimonnet style" remarkably well freshness, expression and balance.

With 5 terroirs, and nearly 74% Grand Cru, this cuvée is very complex for "the base cuvée of our vintages".

In the archives, we can find traces of the Gimonnet family around 1750, as winegrowers in the Champagne region.

It wasn’t until 1935 that Pierre Gimonnet started the vinification activity with the Pierre Gimonnet House. Michel, son of Pierre, went back to the House in 1955. Today, Olivier and Didier Gimonnet, a third generation, are managing the House with a 3-centuries-old expertise.

It is one of the few champagne houses to own a vineyard planted solely in Chardonnay on 28 hectares, on the prestigious Côte des Blancs, on the Reims mountain, and also exclusively Premier Cru : Vertus et Cuis (where the House is located) and Grands Crus : Cramant, Chouilly and Oger.
