It is a white champagne coming exclusively from the Grand Cru Classé of Bouzy, one of the 17 villages classified thus at the top of the qualitative hierarchy of champagnes.
It is a champagne of assembly of wines of Bouzy resulting from vines of type Pinot Noir for 80% and 20% of type Chardonnay.
After the manual harvest, the cuvée is aged in French oak barrels for a few months, then bottled to go down into a deep cellar for optimal aging.
The dress is brilliant gold.
On the nose as well as on the palate: a wide palette of small red fruits such as wild strawberry, blueberry or Burlat cherry, followed by citrus hints from lychee to candied mirabelle plum, ending with lightly woody and vanilla flavored Italian bergamot.
Food and wine pairing : oysters from Marennes-Oléron, gambas or lobster flambéed with Dubosquet XO cognac, sea bass a la plancha, white meats with truffled morels.
