This champagne comes exclusively from the André Beaufort vineyard planted on the Grand Cru d'Ambonnay, one of the 17 unique villages classified Grand Cru, at the top of the quality hierarchy of champagnes. The cuvée was made from the 1979 harvest, an exceptional vintage.

It is a Champagne with a majority of Pinot Noir grapes and for the rest minimal, varying according to the years, of Chardonnay grape.

The wine was aged in French oak barrels for several months before bottling on the lees, before disgorging to order.

The nose and the tasting on the palate reveal fragrances of small red fruits such as wild strawberries or blueberries, harmoniously linked to fine hints of white flowers such as acacia, and citrus fruits, such as lychee, Corsican clementine. or bergamot from southern Italy. These delicate scents enhance the flavors of red fruits such as the cherry from the Basque Country or the Gariguette strawberry or the Spring Mara.

Food and wine pairing: as an aperitif with sushi canapes, salmon makis, canapés of duck or goose foie gras from Gers or Landes. Perfect with white meats flavored with oyster mushrooms, chanterelles, porcini mushrooms from Bordeaux. Will suit grilled fish a la plancha or fish in sauce such as Saint Pierre or sea bass. Champagne André Beaufort is an extremely rare pearl in the middle of an exceptional region - Champagne - and what is more is located in Ambonnay, also one of the rare of the 17 classified Grands Crus of the Champagne region.

The Beaufort family's vines are located in the heart of Champagne, a stone's throw from Reims, Epernay and Chalons sur Marne. The harvest takes place 60 days after flowering in early summer. The berries are pressed within 12 hours maximum after being brought back to the harvesting room and the very clear wines thus obtained are racked twice.

After the alcoholic fermentation, the Beaufort wines allow the malolactic fermentation to take place, which gives the wines suppleness and smoothness without acidity.

The wines are then bottled and placed on slats and age on the lees before being disgorged some time before shipping and the disgorging date is written on each bottle.
