This champagne comes exclusively from the André Beaufort vineyard, planted in the Grand Cru d'Ambonnay, one of the 17 villages classified Grand Cru, at the top of the quality hierarchy of champagnes. The cuvée was made from the 1988 harvest, an unforgettable year due to an exceptional climatology, at the height of what is possible to obtain, a masterpiece of Nature.
It is a 100% Pinot Noir grape champagne.
The wine was aged in French oak barrels for 22 months before bottling on the lees.
The dress is partridge eye pink
The nose and the tasting on the palate reveal fragrances of small red fruits such as wild strawberries harmoniously linked to hints of lychee or Corsican clementine. These delicate scents enhance the flavors of red fruits such as the cherry from the Basque country or the late spring gariguette strawberry.
To be served around 12 ° C so as not to kill its flavors and fragrances in the nose and in the mouth.
Food / wine pairing: as an aperitif with sushi canapes, salmon makis, duck or goose foie gras canapes. Perfect with white meats flavored with mushrooms of all kinds, grilled fish a la plancha or fish in a champagne sauce. Will also go very well with soft cheeses such as chaource.
Will continue to age in the cellar with a few tastings over time in order to measure its qualitative evolution, bottles lying down, protected from light and vibrations at a constant humidity of around 70%.
