The prestige Cuvee from the Moet & Chandon in limited edition by Tokujin Yoshioka

- +

The following words are attributed to René Geoffroy, cellar master from Dom Pérignon : " every vintage from Dom Pérignon is a unique piece”.

While the grape variety proportions remain secret, we know that it is a blend of Pinot Noir and Chardonnay, from 7 Champagne Grand Crus : Ay, Bouzy, Verzzenay, Mailly, Chouilly (Mont-Aigu), Cramant (Les Buissons), Avize, Mesnil sur Oger (Les Joyettes), and one Premier Cru : Hautvilliers, this famous town where Dom Pérignon lived. He was a monk from the abbey of the same name, and an outstanding œnologist for his time.

The colour is a shimmering gold.

The nose is floral with a wide range of fragrances from pepper spices (white and grey) to a touch of toasted brioche…

To the palate : beautiful freshness and a lot of finesse, but also very complex with a light spicy finish. A lot of smoothness surrounded by a salted note.

Fits with every aperitif and every dish, from caviar canapés to a medallion of lobster, but also with a diverse seafood platter. A splendour with baked fishes, or grilled lobster.

Dom Perignon Champagne still is elaborated from 7 Grands Crus and a Premier Cru : Hautvillers, and still vintage.

This Champagne is elaborated during the exceptional years, from grape harvested the same year.

The first vintage was 1921, and in total, 41 years since then were produced in white Champagne.

Since 1959, the Dom Pérignon vintage comes also in Rosé.
