The Maison Besserat de Bellofon was founded in 1843 in the village of Aÿ by Edmond Besserat.

Over the years, he made a name for himself by distributing his Cuvées to renowned hotels, restaurants and wine merchants.

In 1920, his grandson married Yvonne de Méric de Bellefon, a member of the Champagne nobility. This alliance sealed the beginning of Champagne Besserat de Bellefon and the House acquired the family coat of arms.

The birth of Cuvée des Moines in 1930 was the starting point for this House's take-off. Conceived to meet the challenge of a prestigious Parisian restaurant, the Samaritaine de Luxe ; To create a Champagne that could accompany an entire meal, Victor Besserat creates a Champagne with finesse and a light effervescence.

To the eye: a beautiful robe with shiny bronze reflections.

On the nose: a perfect harmony between the flavors with a first attack finely chiseled on small red fruits followed by touches in the second attack of a light fragrance of quetsche, pear and prune.

In the mouth: this is an intense wine that leads to fruity notes of grapefruit, combined with the freshness, balance and complexity of Verzy and Mailly-Champagne that make this champagne an airy wine.

Food pairing : cIt is a champagne not only as an aperitif but also at the beginning of the meal with grilled fish or fish in sauce or with white meat flavored with black truffle of Quercy or Alba. It can also be served with a red fruit salad for dessert.
