Dom Pérignon

An exceptional Champagne that needs no introduction, inviting to a space-time journey that Réserve each time a new gustatory surprise, such is the characteristic of the House Dom Pérignon.

The first Champagne of prestige to be marketed in 1936, it owes its name to the Benedictine monk Pierre Pérignon who officiated as cellarer at the Abbey of Hautvilliers in the seventeenth century, and who is none other than the precursor of the famous Champagne method.

Today, Dom Pérignon is one of the most famous names of the Champagne, synonymous with perfection and refinement, which has the particularity is to be a Champagne exclusively Millésimé, made in years considered exceptional for the region.

The vintage chosen when it was first released was the splendid 1921, and in total, 41 years have been marketed since.

What is the history of the House Dom Pérignon?

Below the famous coat of arms label is a man, the Benedictine monk of Hautvilliers Abbey Pierre Pérignon (1638-1715), known as Dom Pérignon. Having been put in charge of the vineyard of the Abbey in question, he had set himself the goal of producing the best wine possible. As a self-taught winemaker, he was at the origin of the particular art of blending different vintages and grape varieties, thanks to his assertive sensitivity and his certain talent as a taster.

Description Dom Pérignon P2 2000.

It is to René Geoffroy, the Chef de Caves of Dom Perignon that we can associate these words: "each vintage of Dom Perignon is a unique piece".

If the proportion in terms of grape variety remains a secret, on the other hand it is a blend of Pinot Noir and Chardonnay from the year 2000 from 7 Grands Crus of Champagne: Aÿ, Bouzy, Verzzenay, Mailly, Chouilly (Mont- Aigu), Cramant, (Les Buissons), Avize, Mesnil sur Oger (Les Joyettes), and a Premier Cru: Hautvillers, this famous village where Dom Perignon lived, a monk of the Abbey of the same name and a remarkable oenologist for his work at the time.

The dress is of a brilliant Bronze-Gold.

The nose is floral with a wide range of fragrances from white flowers to grey pepper spices and a touch of toasted bread and sweet almond.

In the mouth: very nice freshness and finesse but also very complex with a light spicy finish. A lot of roundness surrounded by a slightly saline touch.

Suitable for all aperitifs and all dishes from caviar canapés to lobster medallions but also with a large platter of various seafood. A splendor, on fish in papillote or grilled lobsters...
