Ambonnay, a Grand Cru of champagne and, for reasons, so prestigious

- +

This champagne comes exclusively from the André Beaufort vineyard, planted in the Grand Cru d'Ambonnay, one of the 17 villages classified Grand Cru, at the top of the quality hierarchy of champagnes. The cuvée was made from several harvests thus constituting a perpetual reserve

It is a champagne with a majority of Pinot Noir grape variety.

The wine was aged in French oak barrels for several months before bottling on the lees.

The dress is pink partridge eye.

The nose and the tasting on the palate reveal fragrances of small red fruits such as wild strawberries. Delicate scents of woody vanilla bergamot enhance the flavors of red fruits such as the cherry from the Basque country or the spring gariguette strawberry.

To be served around 12 ° C so as not to kill the elegance of the flavors on the nose and in the mouth

Food and wine pairings: as an aperitif with sushi canapes, salmon makis, duck or goose foie gras canapes. Perfect with white meats flavored with mushrooms of all kinds, grilled fish a la plancha or fish in this champagne sauce flavored with ginger. Will also go very well with soft cheeses such as chaource.

Will continue to age in the cellar with a few tastings over time in order to measure its qualitative evolution, bottles lying down, protected from light and vibrations at a constant humidity of around 70%.

Champagne André Beaufort is an extremely rare pearl in the middle of an exceptional region - Champagne - and what is more is located in Ambonnay, also one of the rare of the 17 classified Grands Crus of the Champagne region.

The Beaufort family's vines are located in the heart of Champagne, a stone's throw from Reims, Epernay and Chalons sur Marne. They extend over a limestone soil, a key element in the wonderful alchemy of Champagne making and very favorable to give birth to a Grand Vin, classified as Grand Cru, as defined by the sommeliers of high reputation at the beginning. From twentieth century.

Three quarters of the vineyard is planted with Pinot Noir and the rest with Chardonnay for a perfect balance between taste sensations and flowery scents.

Since 1969, the Ambonnay vineyard has been cultivated using agrobiology without additives from non-natural products. In the same way, the soil of the vineyard is cultivated on the surface only to limit the competition of weeds without bruising the roots of the vine.

The harvest takes place 60 days after flowering in early summer. The berries are pressed within 12 hours maximum after being brought back to the harvesting room and the very clear wines thus obtained are racked twice.

After the alcoholic fermentation, the Beaufort wines allow the malolactic fermentation to take place, which gives the wines suppleness and smoothness without acidity.

The wines are then bottled and placed on slats and age on the lees before being disgorged some time before shipping and the disgorging date is written on each bottle.
