The Domaine William Fevre is one of the most respected and emblematic names in the Chablis region, in Bourgogne. Founded in the heart of the Chablis vineyard in the 19th century, this family-run Domaine is synonymous with excellence, authenticity and terroir.

The history of Domaine William Fevre dates back to 1957 when William Fevre, a visionary with a passion for wine, bought and revitalized the family Domaine. His relentless quest for quality and his love for the Chablis terroir led him to acquire precious parcels of vines in the appellation's best climats. Today, Domaine owns nearly 78 hectares of vines, the majority of which are located in the prestigious premier and grand crus of Chablis.

What sets Domaine William Fevre apart is its deep commitment to the unique terroir of Chablis. The Chablis region is renowned for its Kimmeridgian soil, made up of limestone and marl rich in marine fossils. This terroir gives Chablis wines their distinctive character, marked by elegant minerality and aromatic purity. The vines are planted exclusively with the Chardonnay grape, which flourishes in this particular terroir to produce white wines of crystalline purity.

The wines of Domaine William Fevre express the unique characteristics of each terroir with finesse and precision. Premier crus, such as Les Vaillons, Les Lys, and Montmains, offer a rich aromatic palette, aromas of white flowers, citrus and chiseled minerality. Grand crus, such as Les Clos, Bougros, Vaudésir and Les Preuses, are the jewels in the crown of William Fevre, producing wines of exceptional depth and complexity. They are distinguished by their concentration, elegance and ability to age magnificently.

Viticulture at Domaine William Fevre is conducted with great respect for the environment. The vines are cultivated according to the principles of sustainable agriculture, with particular attention paid to preserving biodiversity and limiting chemical inputs. Harvesting is carried out by hand, enabling a rigorous selection of grapes and guaranteeing optimal quality at every stage of the winemaking process.

In the cellar, the winemaking process is carried out with a constant concern for pRéserver the pure, authentic expression of the grapes. Wines from Domaine William Fevre are matured in French oak barrels, where they subtly acquire vanilla and toasty notes that integrate harmoniously with the minerality and freshness of the wines.

Emblematic of the Chablis appellation, Domaine William Fèvre is renowned for its Premiers and Grands Crus Chardonnay. 

The "Valmur" cuvée is produced in the lieu-dit of the same name. Harvested by hand, special care is taken with the grapes to Extra extract the best aromas. 

This 100% Chardonnay with exceptional ageing potential expresses lively, sharp aromas of lime blossom. With great minerality, the wine is taut with tremendous energy. Developing notes of fresh herbs and citrus fruits such as fresh lime, the density on the palate is remarkable and its silky texture worthy of a Grand Cru of Chablis 

With its 15 years of age, this William Fèvre Chablis Grand Cru "Valmur" 2008 is one of those remarkable wines that we like to appreciate for its evolutionary notes such as almond with honeyed notes.

It will go perfectly well with sea bream à la papillote and gravlax salmon.
