Less renowned than its neighbors, Pommard and Volnay, Savigny-lès-Beaune wines are nevertheless delicious, fragrant and elegant. Located in the northern part of Côte de Beaune, this appellation covers around 500 hectares of vines. Of these, 316 are planted with red grapes, 132 of which are classified as Premier Cru. The subsoil is composed of clay on the surface and limestone at shallow depths, giving the wine a magnificent floral bouquet, strong minerality and a delicious saline sensation. The reds exude aromas of red and black berries (raspberry, cherry, blackcurrant) and flowers (violet). On the palate, they are slightly tannic, but very fine and elegant; in other words, complex and balanced. The Premier Cru Les Lavières, located below Les Vergelesses, produces rounder, earlier-ripening wines than some of the other Premier Cru climats in Savigny-lès-Beaune. Named after the discovery of Merovingian burials on the site, "Lavières" is Burgundian for a large limestone slab (a lava). The Domaine Tollot-Beaut owns 1 hectare.
The wines, made from 100% Pinot Noir grapes and around 40% destemmed, ferment completely for 15 days with 2 daily punchings of the cap, first in cement vats (alcoholic) and then in stainless steel vats (malolactic). Aging takes place for 16 to 18 months in 228 L French oak barrels, 1/3 of which are new.
The Savigny-Lavières Premier Cru du Domaine Tollot-Beaut are simple, pure and fresh wines, embodying everything we love about the wines of Côte de Beaune. La robe is bright ruby-purple for this 2021 vintage. The nose is very expressive, with small red and black berries, morello cherry and blackcurrant, and a hint of sweet spice, a vanilla base, finishing with a few smoky notes. The palate features the energy of red berries, cranberry, raspberry and redcurrant, the freshness of heather and the indulgence of chocolate and boysenberry. The finish is fresh citrus and gently spicy.
This Savigny-lès-Beaune Premier Cru Les Lavières is a smooth, refined wine that will sublimate rabbit with mustard or small game birds such as stuffed quail or pigeon with bacon and mushrooms.
