It was not flies but bees and the presence, in ancient times, of beehives in this climate south of Beaune, overlooking Pommard, that gave it this name.
The "Clos des Mouches" is one of the pearls of Burgundy, certainly at the level of a grand cru. Indeed, its hillside location gives it a lot of precision and purity.
The notes of white flowers, honey and wax already foreshadow a high-level wine. It has a racy, chiseled palate of incomparable length.

The roots of this Burgundy family go back to the Middle Ages.
The House was only founded in 1831 by Bernard Bichot in Monthélie but it was Albert Bichot, the current name of the house, who settled it definitively in Beaune in 1912, in the heart of Burgundy, not far from the prestigious walls of the Hospices de Beaune , where the renowned Auctions are held every year.
The house currently owns the estates of Long-Depaquit en Chablis (65 hectares), Clos-Frantin in Nuits-Saint-Georges (7.3 hectares), such as Château-Gris (3.5 hectares), Pavillon en Pommard and a few others but not classified as Grand or Premier Cru that our house, faithful to its Charter, has not retained in its list of its Burgundy wines.
After a reasoned culture of the management of the vineyards shared with its wine-growing suppliers, after meticulously executed harvests, the wines are aged in barrels for 12 to 18 months. These barrels are of different origin (Tronçais, Allier ...), of different ages and toastings and are used according to their specificities to age the wine in an optimal way. A whole art that only the descendants of these old Burgundian families know and that they pass on like a precious heritage.
Albert Bichot is not only a personal wine heritage but also a heritage of close relationships with Burgundy winegrowers. It is also a heritage of know-how transmitted for many centuries. It is a diversity that commands admiration.
