A vintage that stands out as a Grand because of the exceptionally good climatic conditions in 2019: a very slow rise of sap under a good temperature, a beautiful spring formation of formances, a very beautiful flowering without rain on the flower and months of 'August and September in ideal alternations of rain and sun with optimal veraison and pretty blooms at harvest time.

The berries were harvested from vines planted in 1955 and therefore 64 years old (a rarity to be highlighted) on an area of ​​approximately one and a half hectares with a South-East exposure and planted exclusively with Pinot Noir grapes. This piece of vines is a monopoly and is located in the locality "les Fourneaux". It is a Premier Cru red wine.

All the harvest was manual and the yield was 5,600 bottles per hectare. Vatting: a dozen days. The wine was put in French oak barrels, about 35% of which was new wood. The entire harvest was bottled by Maison Tollot-Beaut.

On the nose and on the palate: small red fruits such as marat or wild strawberries, blueberries, burlat cherries followed by notes of spices such as black and white peppers, cinnamon. The tannins are very tight and finely chopped. Delicate very silky finish and woody vanilla.

Tasting at room temperature. It is a wine to be decanted which will not stop improving in quality, of which we will measure the qualitative peak over time. The bottles will be kept lying down protected from light and vibrations with an optimum humidity of 70%.

Food and wine pairings: red meats, game birds and feathers and cheeses such as Camembert de Normandie, Fourme d'Ambert, Maroilles du Nord, Ossau Iraty from the Basque Country, Goat cheese from the Pyrenees or Munster d ' Alsace Lorraine with a pinch of cumin.
