Château Canon

Le Château Canon is inexorably associated with the finesse and elegance of Saint-Emilion's finest wines. The origin of its name is due to Jacques Kanon, a privateer in the Royal Navy who acquired it in 1760.

Visionary, he instinctively understood the potential of this terroir and had vines planted there. In 1996, Château Canon was bought by Chanel, a company run by the Wertheimer family.

Château Canon was consecrated Premier Grand Cru Classé in the first edition of the Saint-Emilion classification in 1955, a position it has always maintained thanks to the excellence and timeless style of its wines.

Château Canon is planted in a 34-hectare vineyard on the clay-limestone plateau of Saint-Emilion. The grape varieties are 70% Merlot and 20% Cabernet franc. The vines are surrounded by walls to protect them from spring frosts, and the nature of the soils ensures that the grape varieties are always fresh and reach excellent ripeness.

The wines are aged for 18 months in French oak barrels, 70% of which are new. The estate produces a Second vin, Croix Canon, with the same attention to detail as the grand vin.

The Château Canon imposes unforgettable wines of great class, featuring a sumptuous balance between tannic structure, purity of fruit and generosity.

Description Château Canon 2009 Double Magnum.

2009 is a historic year for the Bordeaux vineyard, synonymous with a great harvest. The climatic conditions were characterized by a lot of sunshine from the flowering of the vine until the harvest, with very little rainfall. August was very dry without excessive heat and September was very beautiful. All these conditions gave a grape of an exceptional quality.

Blend of the 2009 vintage : 75% Merlot, 25% Cabernet franc

The robe is an intense dark red color, tinged with ruby red highlights.

The nose harmoniously blends freshness, finesse and notes of red fruits such as cherry and strawberry, blackcurrant buds and roasting.

The mouth, very well balanced, shows an exquisite silkiness, evolving all in roundness and rising crescendo in power thanks to fine tannins. Particularly tasty, with tones of flowers and blackberry, it blooms on a long and precise finish.

Food and wine pairing :

Château Canon 2009 will be perfect with a roast rack of lamb. It will also go very well with a rabbit with mustard, a jugged hare with morels or a venison jig.

Reserve it for soft cheeses with a bloomy rind such as brillat-savarin, camembert or coulommiers.

A dessert such as an opera cake or a famous dark chocolate mi-cuit will do it justice.

Ageing potential and tasting :

Château Canon 2009 in double magnum can still wait more than 20 years before being tasted, its peak being between 2045 and 2050 due to the large capacity of the bottle. However, it can be enjoyed now, by placing the bottle in the room the day before to acclimatize to room temperature and opening it. If this is not possible, open it ideally 6 to 7 hours before tasting.

To follow its evolution over time, do not hesitate to proceed to successive tastings to measure the evolution of the wine and its qualitative peak.

The bottles should be kept in a dark cellar, lying down, with an optimal hygrometric degree of 70%.
