The 2018 vintage is a great vintage for the Bordeaux vineyard, despite the climatic contrasts it experienced. Following a rather cool spring, the summer was marked by strong heat and a lot of sunshine, very beneficial for the vines. The exceptional late season in September and October will see alternating sunny days and cool nights that will allow the grapes to obtain a beautiful color, to concentrate in tannins and aromatic freshness.

Blend of the 2018 vintage: 65% Cabernet Sauvignon, 30% Merlot, 5% Petit Verdot.

The color is an intense dark red, tinged with purple highlights.

The nose is elegant and very concentrated, offering notes of red and black fruits, including cherry and black currant, menthol, toasted wood and white pepper.

The attack is melting and precise, revealing a full matter and a lot of volume. Flavors of red berries express themselves harmoniously in the middle of the mouth, followed by dark chocolate and spices. Juicy and carried by an elegant tannic structure giving it a nice freshness, it ends on a long persistent and finely peppered finish.

Food and wine pairing:

Domaine de Chevalier red 2018 will go perfectly with herb-crusted roast beef, rack of lamb confit, partridge salmis, venison hazelnuts or marcassin confit civet.

For a match with cheese, choose uncooked pressed cheeses: Edam, Gouda, Saint-nectaire, morbier, Tomme de Savoie or Salers.

For dessert, enjoy it with a praline dessert, a chocolate mi-cuit or a pear-caramel cake.

Cellaring potential and tasting:

Domaine de Chevalier red 2018 has great aging potential. It can easily wait in the cellar for another ten years to improve, or even longer. Its peak will be between 2033 and 2038.

However, it lends itself perfectly to tasting today. To do so, take care to place the bottle the night before in the serving room at room temperature. Open and decant ideally 4 to 5 hours before tasting.

The bottles will be kept in the cellar, protected from light, lying down, at an optimal hygrometric degree of 70%.

The main production is the red wine, born from a vineyard which extends over 40 ha with an average age of 35 years on a black sand and fine white gravel soil and on a clay-gravel subsoil, remarkably well drained. 5 other ha of vines are dedicated to the production of white wine.

The grape variety for the red wine : Cabernet Sauvignon 65 %, Merlot noir 30 % Cabernet Franc 2.5 %, Petit Verdot 2.5 %.

The grape variety for the white wine : 70% Sauvignon blanc, 30% Sémillon.

The average annual yield is about 167 barrels, or about 200,000 bottles.

All the grapes are harvested by hand with triple sorting in the vineyard and in the cellar. The wine is aged in new barrels for 30% and aged for 18 months before bottling.
