Château Canon

Le Château Canon is inexorably associated with the finesse and elegance of Saint-Emilion's finest wines. The origin of its name is due to Jacques Kanon, a privateer in the Royal Navy who acquired it in 1760. 

Visionary, he instinctively understood the potential of this terroir and had vines planted there. In 1996, Château Canon was bought by Chanel, a company run by the Wertheimer family.

Château Canon was consecrated Premier Grand Cru Classé in the first edition of the Saint-Emilion classification in 1955, a position it has always maintained thanks to the excellence and timeless style of its wines.

Château Canon is planted in a 34-hectare vineyard on the clay-limestone plateau of Saint-Emilion. The grape varieties are 70% Merlot and 20% Cabernet franc. The vines are surrounded by walls to protect them from spring frosts, and the nature of the soils ensures that the grape varieties are always fresh and reach excellent ripeness.

The wines are aged for 18 months in French oak barrels, 70% of which are new. The estate produces a Second vin, Croix Canon, with the same attention to detail as the grand vin. 

The Château Canon imposes unforgettable wines of great class, featuring a sumptuous balance between tannic structure, purity of fruit and generosity.

Description Château Canon 2016.

The 2016 vintage was the scene of several climatic acts that gave birth to a magnificent harvest. The weather in June was very favorable to a homogeneous flowering and then to a good beginning of vine growth. The dry and sunny summer, the slightly cooler nights of August and finally, the beautiful after-season of early September allowed the berries to obtain an excellent maturity: Very beautiful color, aromatic potential, richness in sugars and tannins.

Blend of the 2016 vintage: 74% Merlot, 26% Cabernet franc.

The robe is an intense, very dark red color, with beautiful garnet reflections.

The nose offers expressive notes of black cherry, black currant, violet and Sichuan pepper, followed by cocoa and exquisite oak.

The attack is supple, the wine evolves on a creamy texture that releases successive layers of dark berries, blackberry and peppery spices. The tannins are of great finesse, making it rise in power and persistence before it ends on a long and particularly expressive finish. A Château Canon of great class.

Food and wine pairing:

Château Canon 2016 would be a wonderful accompaniment to Angus beef with porcini mushroom and morel sauce, duck breast sautéed with pepper, leg of lamb with garlic and rosemary, chartreuse of pheasant hen or roast chicken.

For a pairing with cheese, choose uncooked pressed cheeses: Edam, Gouda, Saint-nectaire, morbier, Tomme de Savoie or Salers.

For dessert, the pairing will be gourmet with a Paris-Brest style layer cake, a black forest or a raspberry and chocolate charlotte.

Cellaring potential and tasting:

Château Canon 2016 is a great nectar built for aging, and can wait several more years to refine its potential. Its peak will be reached between 2032 and 2035.

However, it lends itself wonderfully to tasting now, by placing the bottle the evening before at a room temperature between 15 and 18°C. Open and decant ideally 6 to 7 hours before tasting.

The bottles should be kept in the cellar, protected from light, lying down, at an optimal hygrometric degree of 70%.
