Château Canon

Le Château Canon is inexorably associated with the finesse and elegance of Saint-Emilion's finest wines. The origin of its name is due to Jacques Kanon, a privateer in the Royal Navy who acquired it in 1760. 

Visionary, he instinctively understood the potential of this terroir and had vines planted there. In 1996, Château Canon was bought by Chanel, a company run by the Wertheimer family.

Château Canon was consecrated Premier Grand Cru Classé in the first edition of the Saint-Emilion classification in 1955, a position it has always maintained thanks to the excellence and timeless style of its wines.

Château Canon is planted in a 34-hectare vineyard on the clay-limestone plateau of Saint-Emilion. The grape varieties are 70% Merlot and 20% Cabernet franc. The vines are surrounded by walls to protect them from spring frosts, and the nature of the soils ensures that the grape varieties are always fresh and reach excellent ripeness.

The wines are aged for 18 months in French oak barrels, 70% of which are new. The estate produces a Second vin, Croix Canon, with the same attention to detail as the grand vin. 

The Château Canon imposes unforgettable wines of great class, featuring a sumptuous balance between tannic structure, purity of fruit and generosity.

Description Château Canon 2005.

2005 was a great vintage, a general success for the whole Bordeaux vineyard. The weather was characterized by an exceptional drought as well as by strong heat in spring and summer, without excess. These conditions were therefore favorable to the development of the vine cycle, where all the stages were perfectly executed until the grapes reached an exceptional maturity in September.

Blend of the 2005 vintage: 80% Merlot, 20% Cabernet Franc.

The robe is an intense purple color, still deep, with beautiful tiled reflections.

The nose is fine and complex, revealing very ripe notes of black fruits, menthol, peppery spices and truffle.

The attack is very delicate, revealing a body with a delicate touch, worthy of a velvet. It evolves on more power and density in the middle of the mouth, supported by elegant tannins and a beautiful acidity. Releasing flavors of ripe berries, chocolate and pepper, it melts with vibrant energy on a long, lingering finish. A great nectar of Saint-Emilion.

Food and wine pairing:

Château Canon 2005 will be a perfect match for a fillet of beef with Chimichurri sauce, a shoulder of lamb confit, a slab of venison with truffles, or a vegetarian dish such as a perfect egg accompanied by pan-fried ceps, lacy tuiles, roasted hazelnuts and a herbaceous foam.

Try it also with uncooked pressed cheeses: Edam, Gouda, Saint-nectaire, morbier, Tomme de Savoie or Salers.

For dessert, finish by savoring it with a pistachio and chocolate praline entremet, a black forest or a Grand Cru chocolate tart.

Ageing potential and tasting:

Château Canon 2005 is a great nectar built for aging, and can still wait in the cellar to refine its potential. Its peak will be reached between 2030 and 2035.

However, it lends itself wonderfully to tasting now, by placing the bottle the evening before at a room temperature of between 15 and 18°C. Open and decant ideally 5 to 6 hours before tasting.

The bottles should be kept in a dark cellar, lying down, at an optimal hygrometric degree of 70%.
