Domaine de Chevalier

The Domaine de Chevalier is a great name that inevitably comes to mind when we think of Pessac-Léognan wines. Its origins go back several centuries, and it was once known as "Chibaley", from its Gascon name, according to official records from 1783. 

The latter would also mention a nearby path leading to Santiago de Compostela. The notion of Domaine was deliberately retained by the few owners it has successively known, distinguishing it when the mention of "Château" gradually began to appear in the vineyard.

Grand Cru Classé in red and white in the 1953 Graves classification, the property has belonged to the Bernard family, major Bordeaux merchants, since 1983. Olivier Bernard and his son Adrien manage it, always striving for perfection. 

Domaine de Chevalier is based on a 45-hectare vineyard planted on gravel with clay-gravel subsoils.

- The red grape varieties (40 ha) are 63% Cabernet Sauvignon, 30% Merlot, 5% Petit Verdot and 2% Cabernet franc. The grand vin is aged for 18 months in French oak barrels, 35% of which are new. L'Esprit de Chevalier is the Second vin rouge.

Description Domaine de Chevalier Blanc 2018.

The 2018 vintage is a great vintage for the Bordeaux vineyard, despite the climatic contrasts it experienced. Following a rather cool spring, the summer was marked by strong heat and lots of sunshine, very beneficial for the vines. The exceptional late season in September saw alternating sunny days and cool nights that allowed the Sauvignon Blanc and Semillon plots to offer a beautiful aromatic freshness to the berries.

Blend of the 2018 vintage: 75% Sauvignon Blanc, 25% Semillon.

The robe is a brilliant lemon yellow color, tinged with sublime green reflections.

The nose mixes aromatic freshness and greediness, with notes of white flesh fruits, peach and lychee, acacia flower and lime blossom, enhanced by a touch of brioche.

The attack is lively and elegant, offering a concentrated, fine and unctuous wine carried by a beautiful acidity. It delivers harmoniously balanced fruity, buttery and mineral notes of gunflint, which glide to a caressing finish of superb freshness. A great white wine from the Graves region.

Food and wine pairing:

Domaine de Chevalier white 2018 will taste great with starters like salmon tartar, sea bream ceviche with tiger leche or white asparagus veloute with 64°C egg and garlic-infused oil. For main courses, enjoy it with sweetbreads in cream sauce, trout in beurre blanc or a scallop parmentier.

For a match with cheese, choose Brebis Basque, Ossau-Iraty, Selles-sur-Cher or Pouligny-Saint-Pierre.

For dessert, finish it off with an orange salad with cinnamon, saffron rice pudding or a citrus sorbet.

Cellaring potential and tasting:

Domaine de Chevalier white 2018 is a great white wine with tremendous aging potential. It can easily wait between 10 and 15 years in the cellar to refine its splendor. Its peak will be between 2028 and 2032.

However, it can be drunk now, taking care to take the bottle out of the cellar a few minutes in advance so that it can acclimatize and be drunk ideally at 10°C. A decanting of half an hour is also possible.

The bottles will be kept in the cellar protected from the light, lying down, at an optimal hygrometric degree of 70%.
