Château Pavie Macquin

It's impossible to talk about Saint-Emilion's great wines without mentioning Château Pavie Macquin, one of the most complex and seductive. The Domaine was founded by Albert Macquin (1852-1911), a specialist in the study of American rootstocks and the art of grafting.

Saint-Emilion and the French vineyard as a whole owe him the use of the grafted plant, which was to save the vineyard ruined by Phylloxera at the end of the 19th century. His great-grandchildren, the Corre-Macquin family, are still at the helm of Domaine, and managing director Nicolas Thienpont works in collaboration with oenologist Stéphane Derenoncourt. Together, they help make this illustrious terroir shine year after year. 

The Château Pavie Macquin would manage to earn its place as Saint-Emilion's Premier Grand Cru Classé at the 2006 edition, a position it still holds today, testifying to its consistency.

The Château Pavie Macquin looks after a 15-hectare vineyard, ideally situated on Saint-Emilion's highest plateau, part of which overlooks the Fongaban valley. It is planted on clay-limestone soils, and the grape varieties are 84% Merlot, 14% Cabernet franc and 2% Cabernet Sauvignon. 

An Second wine is produced by the estate with equal care and precision, Les Chênes de Macquin.

Description Château Pavie Macquin 2018.

Great vintage for Bordeaux, 2018 will have allowed, by its climatology and its phase of maturation under ideal conditions in September and October, the development of exceptional red wines. Château Pavie Macquin is no exception to the rule and delivers a very fine success.

Blend of the 2018 vintage: 78% Merlot, 20% Cabernet Franc, 2% Cabernet Sauvignon

The color is a beautiful dark purple, almost black, tinged with beautiful purple highlights.

The nose is intense and of great finesse, offering notes of jammy black fruits, violet, truffle and pepper, with a hint of cocoa.

In the mouth, the attack is supple, the wine evolves very quickly on a velvety and dense texture, supported by a finely structured tannic framework. The notes of red and black fruits give it a very nice freshness all along, and it blossoms on a tasty, long and precise finish. What a great vintage for Pavie Macquin.

Food and wine pairing:

Château Pavie Macquin 2018 will pair beautifully with beef tenderloin with Chimichurri sauce, breaded soft-boiled egg with chanterelles and country ham tuiles, duck breast with pepper sauce, snacked veal sous la mère, or confit rack of lamb.

For a match with cheese, choose uncooked pressed cheeses: Edam, Gouda, Saint-nectaire, morbier, Tomme de Savoie or Salers.

For dessert, enjoy it with Yann Couvreur's Caribbean dessert, a black forest or a pear and chocolate tart.

Cellaring potential and tasting:

Château Pavie Macquin 2018 has great aging potential, able to wait several years to improve. Its peak will be reached between 2033 and 2036.

However, it can be enjoyed today if it is properly prepared. To do so, take care to place the bottle the night before in the serving room at a room temperature between 15 and 18°C. Open it and decant it ideally 5 to 6 hours before tasting.

The bottles should be kept in the cellar, protected from the light, lying down, at an optimal hygrometric degree of 70%.
